In South Africa little shrimp (prawns in the US) are sold in supermarket in 1kg frozen bags. They're often used in samoosas (samosas) or as a flavour base for soups and sauces.
This recipe came about as one of those Sunday morning what can I make my wife for breakfast questions. I had intended to make Huevos Rancheros, but had no bell peppers. Still, my wife loves both eggs and seafood so I thought... why not combine them?
That's how this recipe came about. A blend of fried eggs served with shrimp that are fried and finished with tomato purée, hot sauce and Worcestershire sauce. Very easy to make and very tasty.
2 cups (150g) frozen shrimp (prawns)
2 tbsp tomato purée (tomato paste)
1 tsp Worcestershire sauce
2 tsp Dijon mustard
hot sauce, to taste
4 tbsp cooking oil
At this point, stir in the tomato purée, Worcestershire sauce and Dijon mustard. Stir to coat the shrimp then add a few shakes of hot sauce (or to taste).
Continue cooking until the liquid begins to dry up (there will be more liquid than you think, due to the use of frozen shrimps).
Move the prawns to one side and crack in the eggs. Fry until the whites are cooked but the yolks are still runny.
Transfer the fried eggs to serving plates and scatter around the prawns. Add your choice of garnish (gherkins and spring onions are great). Serve accompanied by crusty bread and/or toast.
We like our food spicy, so we add a few shakes of hot sauce on the eggs... but that is up to you.
