Easter Brunch Sausage and Mushroom Strata Recipe

Easter Brunch Sausage Strata is a traditional British recipe (based on an Italian original) for a layered dish of bread, sausages and mushrooms bound with eggs, milk and cheese that's allowed to infuse over night and then oven baked and which is typically served for breakfast particularly at Easter time. Easter Brunch Sausage and Mushroom Strata Recipe

Ingredients:

225g (1/2 lb) pork sausages
100g (2/5 lb) mushrooms, sliced
40g (1 1/2 oz) onions, sliced
225g (1/2 lb) mature (sharp) cheese, cubed
500g (1 lb) cubed bread
250ml (1 cup) milk
4 whole eggs, lightly beaten

Method:

Brown the sausages in a large non-stick pan. Drain away the excess fat then add the mushrooms and onions and fry for a further 5 minutes. Take off the heat and set aside to cool for 10 minutes. When the mixture has cooled stir-in the cheese and cubed bread then transfer the mixture to a greased 20cm square baking dish.

Whisk together the milk and eggs then pour over the sausage mix. Cover and chill in the refrigerator for at least 2 hours to allow the liquid time to penetrate the bread. After this time remove the covering and transfer to an oven pre-heated to 175ºC (350ºF). Bake, uncovered, for about 1 hour, or until set and golden brown. Allow to stand for 10 minutes then slice and serve.
