Here's a quick and easy recipe to prepare spring vegetables to accompany yor Easter dinner. Whatever you're preparing, be it lamb, fish, ham, turkey or a vegetarian option this recipe will work with them all. Moreover, it uses the best of spring ingredients.
This really is so quick and simple that you would be silly not to include it as an accompaniment for one of your meals.

3 little gen lettuces, quartered lengthways
200g (1/2 lb) radishes, trimmed (halve them if large)
250g (1/2 lb) asparagus, woody ends snapped off and cut into thirds
1/2 buch fresh flat-leaf parsley, coarsely chopped
1/2 bunch fresh chervil (substitute tarragon if not available), coarsely chopped
Add the asparagus pieces and cook for 1 minute then take off the heat and stir in the herbs. Adjust the seasonings, turn into a warmed bowl and serve.

Easter Spring Vegetables Recipe
Ingredients:
2 tbsp extra-virgin olive oil3 little gen lettuces, quartered lengthways
200g (1/2 lb) radishes, trimmed (halve them if large)
250g (1/2 lb) asparagus, woody ends snapped off and cut into thirds
1/2 buch fresh flat-leaf parsley, coarsely chopped

Method:
Place a large frying pan (with a lid) over high heat. Add the olive oil then toss in the lettuces and radishes. Toss to coat then add 50ml (1/4 cup) water. Season to taste with salt and black pepper, cover and cook for about 4 minutes, or until the the radishes beging to soften.Add the asparagus pieces and cook for 1 minute then take off the heat and stir in the herbs. Adjust the seasonings, turn into a warmed bowl and serve.
