225g (1/2 lb) rice sticks (also known as rice noodles or rice vermicelli)
3 tbsp groundnut oil
1 small onion, finely sliced
1 green bell pepper, finely sliced
1 red bell pepper, finely sliced
2 tbsp black bean sauce
3 tbsp light soy sauce
1 tsp Shaoxing rice wine
1/2 tsp sugar
1/2 tsp ground white pepper
Cook the rice sticks according to their packet instructions. When cooked, drain and set aside.
Place a work over high heat. Add the oil and when hot use to stir-fry the beef for 1 minute, or until the meat has changed colour. Drain the meat and set aside.
Pour any excess oil from the wok and use to stir-fry the onion and bell peppers for 1 minute. Add the black bean sauce and stir well to combine. Pour in the light soy sauce then toss the rice sticks with the vegetables. When fully incorporated add the beef and stir until warmed through.
Serve immediately.
