Vanilla Frozen Yoghurt Recipe

Vanilla Frozen Yoghurt is a traditional American recipe for a classic frozen yoghurt made from a blend of vanilla extract, milk, yoghurt, sugar and golden syrup set with gelatine that's finished by churning in an ice cream machine. This is the basic recipe, which gives you the information you need to make frozen yoghurt. However, on top of the base yoghurt you can start to add other ingredients like fruit purées, fresh fruit, nuts... almost anything your heart desires.

I love my fro-yo and this recipe really works at home. If you want to do without the gelatine for a truly vegetarian version then you need to use real Greek yoghurt as your base. Alternatively, buy your yoghurt and then sit in a fine-meshed sieve lined with muslin (cheesecloth) and allow to drain over night in the refrigerator. Use the drained yoghurt as your base and omit the gelatine.

Here in KZN Greek yoghurt, the real stuff, not the Greek-style which won't work, is virtually impossible to get. So I have to use this recipe or make my own strained yoghurt as a gelatine-less base.

Vanilla Frozen Yoghurt

Ingredients:

1 tsp vanilla extract
3 tbsp milk
100g (1/2 cup) sugar
1 sheet gelatine
1/8 tsp salt
360ml (1 1/2 cups) plain yoghurt
60ml (1/4 cup) golden syrup (corn syrup)

Method:

Combine the milk, sugar, gelatine and salt in a saucepan and allow to stand for 1 minute. Place on a low heat and cook for 5 minutes, or until the gelatine dissolves. Take off the heat and allow to cool completely before stirring-in the vanilla extract, yoghurt and golden syrup.

Tip the mixture and place in the refrigerator to chill for at least 8 hours. Transfer to an ice cream machine and churn according to the manufacturer's instructions.
