French beans, known variously as haricots verts and green beans are a staple of Francophone cookery. They also work very well in stir-fries (I often cook them with noodles). Here they are transformed into a delicious accompaniment by stir-frying with black bean sauce. This dish makes a very fast to prepare (it can be done in 15 minutes) accompaniment.

2 tbsp black bean sauce (see this recipe for home-made black bean sauce)
1 tbsp rice vinegar
2 tsp sesame oil
1 tsp palm sugar (or brown granulated sugar)
3 tbsp groundnut (peanut) oil
500g (1 lb) whole French beans (trimmed)
1/4 tsp sea salt (optional)
2 tbsp fresh ginger, minced
1 medium garlic clove, minced
Heat the groundnut oil in a wok (or large frying pan) over medium-high heat and wait until the oil is shimmering. Add the beans, sprinkle with the salt (if using) and sir-fry for 5 minutes.
Reduce the heat to low, add the ginger and garlic and stir-fry for 45 seconds.
Now add the sauce mixture, stir to combine with the beans and stir-fry for 30 seconds, or until the sauce is heated through and the beans are well coated.
Turn into a warmed bowl and serve.
