Arequipe is a traditional Colombian recipe for a classic dessert of milk boiled with sugar, baking soda and salt until thick and caramelized that's chilled and served with saltine crackers and which is known as dulce de leche elsewhere in South America. 675g (1 1/2 lbs) sugar
1/2 tsp baking soda
1/4 tsp salt
1 cinnamon stick
Reduce the heat to medium-low and continue cooking, stirring frequently with a wooden spoon, for about 3 hours, or until the colour of the mixture becomes a golden caramel and the mixture is as thick as porridge.
Take off the heat and allow to cool then pour into a glass bowl and cover with clingfilm (plastic wrap). Cover and refrigerate for at least 2 hours to chill.
This mixture will keep in the refrigerator for up to 1 week and can be used as a base for other desserts and cakes.
As a dessert, arequipe is typically eaten accompanied by saltine crackers.
