Being a barbecue (braai as they say locally), many seasoning and rub blends are found in South Africa. Chicken Seasoning is one of the essentials and makes it's way into several recipes.
However, after perusing the several versions available in the shops I can't really recommend many. Unfortunately, most contain MSG and almost all contain too much salt (the average South African diet tends to be very salt and MSG heavy).
That being said, a chicken seasoning is a must-have kitchen cupboard standby here. So, using the recipes in the stores as a guide I came up with one that I liked. Now, this is a seasoniong, so I haven't eliminated the salt entirely, I've just reduced it significantly. Just remember that when you use this easoning (or any seasoning) don't forget to reduce any other sources of salt.
Like all seasonings and spice blends this is simplicity to make and you can use it for any fowl and even for some fish dishes.
Compared with other chicken seasonings this might be a little heavy on the chilli (incorporating both paprika and cayenne pepper), but it is an African recipe, after all.
Onion powder is another ingredient not commonly available locally to me. I make my own by frying an onion in a little oil with 1/2 tsp Durban masala and 1 tsp garam masala until soft and slightly coloured. I then dry the onioin in a low oven over night before rendering to a powder in a coffee grinder and storing in an air-tight jar.

1 tsp freshly-ground black pepper
